These chocolate and coconut date bars are a great sweet yet healthy snack bars, perfect for that 3pm afternoon slump with a large mug of tea. They are naturally sweetened with desiccated coconut, a couple of spoonfuls of honey and are super easy to make only using 5 ingredients. I whipped up a batch after work one Monday evening to stock up for the week ahead and they took me about 15 minutes in total make, so super easy to fit in around the gym and multiple friends episodes!
To make these yummy snack bars you will need only the 5 following ingredients;
- 360g medjool dates
- 100g cacao powder
- 60g desiccated coconut
- 30g sunflower seeds
- 2 tbsp honey
To start line a 20x20cm tin with greaseproof paper, pop the dates, cacao powder, coconut, sunflower seeds and honey into blender with a pinch of salt and 2 tbsp of water. Whizz until smooth, scraping down the sides of the blender as you go.
Next empty the mixture into the tray and press firmly, sprinkle a little more coconut and sunflower seeds over the top as you wish.
This is a no bake recipe and therefore just requires the date bars to chill in the fridge for about 10 minutes before cutting into bars- enjoy!
